Ingredients

 
1 tablespoon unrefined safflower oil
 
1 small onion, thinly sliced
 
1 clove garlic, finely chopped
 
5 cups water
 
1 tablespoon parsley, chopped
 
1 carrot, thinly sliced
 
2 tablespoons tamari soy sauce

Directions

Heat a large saucepan.
Add the oil, onion, and garlic and saute.
Add the water and all the vegetables.
Simmer 30 minutes.
Add the soy sauce and simmer 5 more minutes, and salt to taste.
Leave the vegetables in the broth or strain them out and use elsewhere.
Use this broth in place of beef broth or bouillon.
