Tamale Pie Recipe
No one can eat just one is my claim for this recipe of Tamale Pie. Tamale Pie goes perfectly as Side Dish. This recipe is a good way to use Pork. I hope that this Tamale Pie recipe is suited to your tastes and wish you luck in preparing it.
Ingredients
1 onion, chopped
1 garlic clove, chopped
1 tablespoon oil
1 cup pitted chopped ripe olives
2 cups cooked pork, diced
2 teaspoons chili powder
1/8 teaspoon coriander
1 teaspoon salt
1 teaspoon Worcestershire sauce
1 can (1 pound) tomatoes
4 cups beef consomme
2 cups corn meal
1 tablespoon butter
Directions
PREPARATION brown onion and garlic in oil in skillet; add all but last 3 ingredients.
Simmer for 10 minutes; reserve bring consomme to boil in a deep saucepan.
Stir in corn meal and butter, cook over low heat for 15 minutes, stirring frequently line bottom and sides of baking dish with 3/4 of cornmeal mixture.
Pour in meat mixture, cover with remaining corn-meal mixture.
Bake at 325° for 1 hour.
