Ingredients
| 4 1/2 Ms. small clams, cleaned | ||
| Garlic | 4 Clove (5gm), peeled | |
| Tomatoes | 2 Medium, chopped | |
| Parsley sprigs | 2 , chopped | |
| Juice of 1/4 lemon | ||
| Olive oil | 3 Tablespoon | |
| 1 heaping tb butter | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Heat olive oil until barely simmering; fry minced garlic over low fire.
When garlic begins to take on color, add tomato.
After tomato liquid has reduced, put in chopped parsley and clams, carefully cleaned and previously soaked at least 1 hour in cold water.
Coyer dish and cook over low fire until all clams are open, giving dish an occasional shake to stir it.
Squeeze lemon over clams, stir in butter, season with pepper and salt to taste, and serve.
