Moroccan Taktouka Recipe Video
Ingredients
1 green pepper
3 tomatoes
1 large onion
2 teaspoons of minced garlic
1 teaspoon of pepper (or to taste)
2 teaspoons of salt (or to taste)
1 teaspoon of paprika
2 tablespoons of olive oil
1/2 cup of water
Directions
Dice the onion, tomatoes and green pepper.
On medium heat, in a cooking pan add the olive oil, onions, garlic and all the spices.
Stir the onions for 5 minutes.
Cover the pan and let the onions cook for another 5 minutes. During this time check on the onions from time to time to avoid burning them.
Add the tomatoes to the pan and stir with the onions.
Cover the pan for another 10 minutes and let the onions and tomatoes cook.
Add the green pepper to the pan, stir and let it cook for 20 minutes. During this time keep stirring from time to time to avoid burning the vegetables.
The Taktouka is ready when the mixture is dry and the pepper is cooked.
