Ingredients
Basic Egg Pasta Dough, made with 3 cups all-purpose flour
1 lb. scallops
1/4 cup butter
3 garlic cloves, finely chopped
1 cup whipping cream
3 tablespoons chopped parsley
Salt and white pepper to taste
Directions
Prepare noodles,from Basic Egg Pasta Dough,.
Wash scallops in cold water and dry well.
Slice scallops into thirds if small, or fourths if large.
Melt butter in a large skillet.
When butter foams, add sliced scallops and garlic.
Cook 2 minutes over medium heat until lightly colored, stirring occasionally.
Stir in cream, parsley and salt and white pepper.
Cook 1 minute longer or until cream begins to thicken.
Fill a very large saucepan two-thirds full with salted water.
Bring water to a boil.
Add noodles.
Bring water back to a boil and cook noodles uncovered until tender but firm to the bite.
Drain noodles and place in skillet with sauce.
Toss noodles and sauce over medium heat until sauce coats noodles, 20 to 30 seconds.
