Tagliatelle With Mushroom Sauce Recipe

Ingredients
1 lb. tagliatelle or fettuccine
3 tbsp. butter
1 shallot or green onion,chopped (white part only),
12 large mushrooms, sliced (preferably wild such as shiitake, oyster, etc.)
4 tbsp. sweet wine (such as Madeira or port)
6 tbsp. chicken stock
1 1/2 cups heavy cream
Salt and pepper to taste
Directions
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.Heat in large pan Add and saute until soft.
Remove mushroom mixture from pan and set aside.
Add to above pan, increase heat, and cook until almost evaporated.
Add and cook for approx.1 minute.
Add and cook for 3 more minutes on a medium heat.
Return mushroom mixture and pasta to pan and blend well
