Ingredients

 
2 cups simple tomato sauce with extra chopped onions
 
2 cups cooked, drained soybean flakes, or cooked whole soybeans and or pinto beans, or cooked lentils
 
4 to 6 jalapeno peppers, chopped and sauteed in 1 tablespoon oil (or 1 small can chopped green chilis)
 
2 to 4 teaspoons chili powder
 
1/4 teaspoon cumin powder
 
1 teaspoon sea salt
 
12 ounces cheese, grated
 
20 taco shells
 
4 cups salad greens, chopped
 
Grated cheese
 
Hot sauce

Directions

Simmer the tomato sauce, bean flakes, peppers, and seasonings for 5 minutes.
Layer the bean mix and grated cheese in the shells.
Bake 5 minutes at 350 Degree.
Add chopped fresh greens to the other ingredients in the shells.
Serve immediately with more grated cheese and hot sauce.
