Taco Cabbage Salad Recipe
Ingredients
4 cups chopped cabbage
1 15 ounce can red kidney beans, drained
2 medium tomatoes, chopped
1/3 cup sliced pimiento stuffed green olives
1 large avocado, pitted, peeled, and mashed
1/2 cup dairy sour cream
1/3 cup milk
1 tablespoon finely chopped onion
1 tablespoon Italian salad dressing
1 tablespoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/2 cup shredded sharp Cheddar cheese
1/2 cup coarsely crushed corn chips
Directions
Chill all ingredients except corn chips.
In a large chilled bowl place chopped cabbage, drained beans, chopped tomatoes, and sliced olives.
Make the dressing by combining the mashed avocado, sour cream, milk, chopped onion, salad dressing, lemon juice, Worcestershire sauce, and salt.
Pour dressing over vegetables in bowl and toss lightly.
Sprinkle cheese and corn chips over the top.
