Tabouli (Cracked Wheat) Salad Recipe

| 2 cups bulgur or cooked cracked wheat, chilled | ||
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Mint | 1 Tablespoon, chopped | |
| 1/3 cup olive or other oil | ||
| Tomatoes | 2 Medium, diced | |
| Green pepper | 3/4 Cup (16 tbs), diced | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| 1/4 cup lemon juice Soy sauce | ||
Directions
Soak bulgur in water 20 minutes; drain well. Or use cold cooked cracked wheat. Combine all ingredients. Toss lightly, and serve with soy sauce, as desired.
