Ingredients

 2 cups bulgur or cooked cracked wheat, chilled
 Parsley1/4 Cup (16 tbs), chopped
 Garlic1 Clove (5gm), minced
 Mint1 Tablespoon, chopped
 1/3 cup olive or other oil
 Tomatoes2 Medium, diced
 Green pepper3/4 Cup (16 tbs), diced
 Onion1/4 Cup (16 tbs), chopped
 1/4 cup lemon juice Soy sauce

Directions

Soak bulgur in water 20 minutes; drain well. Or use cold cooked cracked wheat. Combine all ingredients. Toss lightly, and serve with soy sauce, as desired.
