Tabouli Recipe

Tabouli is a refreshing and tasty salad that is one of the national dishes of Syria and Lebanon. The burgul gives it a delicious nutty flavor that ads to the uniqueness of the Tabouli. Try it!

Ingredients

 
1 cup burgul (cracked wheat)
 
2 large tomatoes
 
3 tablespoons finely chopped spring onions or 1 mild Spanish onion, chopped
 
Salt and freshly ground pepper
 
1 -11/2cups finely chopped parsley
 
1/2 cup chopped fresh mint
 
4 tablespoons olive oil
 
4 tablespoons lemon juice

Directions

Soak burgul in cold water for about 1 hour before preparing salad. Drain and squeeze out as much water as possible (place in a Chux cloth or in a sieve and squeeze with hands). Peel and chop tomatoes. Combine tomatoes and spring onions with burgul and season to taste with salt and pepper. Add parsley, mint, oil and lemon juice and mix well. Taste to see if more seasoning is required — the salad should taste lemony. Stand for at least an hour to allow the burgul to absorb the dressing. Serve in individual bowls with pita bread or fresh cos lettuce leaves for scooping up the salad. Or pile the salad in a pyramid and garnish with halved stoned black olives. A lovely simple first course or as part of a salad meal. Delicious also with thinly- sliced grilled steak in pita bread.
