Tabouleh Recipe

Tabouleh is a mediterranean bulgur salad preparation. Made with fresh vegetables, the bulgur is tossed with olive oil, lemon juice and herbs like parsley and mint for a tantalising taste. Served as a side or accopaniment, it is nurtitious and healthy.

 Bulgur1 Cup (16 tbs)
 Boiling water2 Cup (16 tbs)
 Lemon juice4 Teaspoon
 Olive oil2 Teaspoon
 2 medium size ripe tomatoes, cored, seeded, and chopped, or 1 cup canned low sodium tomatoes, drained and chopped
 1/4 cup minced fresh mint or 1 tablespoon mint flakes
 Parsley3 Tablespoon, minced
 1/2 small red onion, sliced thin
 2 green onions, including tops, chopped fine
 1/4 teaspoon each ground coriander and cumin
 1/8 teaspoon hot red pepper sauce

Directions

Place the bulgur in a large heatproof bowl and pour the boiling water over it.
Cover and let stand for 30 minutes.
Drain off any liquid that remains.
In another large bowl, mix the lemon juice, olive oil, tomatoes, mint, parsley, red onion, green onions, coriander, cumin, and red pepper sauce.
Add the bulgur and toss well to mix.
