Ingredients

 Cracked wheat1 Cup (16 tbs)
 Parsley1 1/2 Cup (16 tbs), chopped
 Mint1/4 Cup (16 tbs), chopped
 Chopped green onion1/2 Cup (16 tbs), minced
 1 cup chopped ripe tomatoes, peeled
 Salad oil1/2 Cup (16 tbs)
 Lemon juice1/4 Cup (16 tbs)
 Salt To Taste
 Pepper To Taste

Directions

1.
Soak the bulgur 2 hours in water to cover.
Drain well.

Mix the bulgur with the parsley, mint, scallions, and tomato, and season to taste.
3.
Shake up the oil and lemon juice together and pour over the bulgur.
Toss lightly to blend well and correct seasoning.
