Tabbouleh Tomato Mint Salad Recipe
Ingredients
| Cracked wheat | 1 Cup (16 tbs) | |
| Parsley | 1 1/2 Cup (16 tbs), chopped | |
| Mint | 1/4 Cup (16 tbs), chopped | |
| Chopped green onion | 1/2 Cup (16 tbs), minced | |
| 1 cup chopped ripe tomatoes, peeled | ||
| Salad oil | 1/2 Cup (16 tbs) | |
| Lemon juice | 1/4 Cup (16 tbs) | |

Directions

Soak the bulgur 2 hours in water to cover.
Drain well.

Mix the bulgur with the parsley, mint, scallions, and tomato, and season to taste.

Shake up the oil and lemon juice together and pour over the bulgur.
Toss lightly to blend well and correct seasoning.
