Tabbouleh Maghreb Recipe

Tabbouleh Maghreb does make a lot. One nice thing about this Tabbouleh Maghreb is that you can make it ahead of time. Start away immediately!

Ingredients

 
1 cup bulgur
 
1 cup hot water
 
1/2 cup lemon juice
 
1/2 teaspoon grated lemon rind
 
3 tablespoons olive oil
 
1 1/2 cups minced fresh parsley
 
3/4 cup minced scallions
 
2 cups cherry tomatoes
 
Lettuce leaves
 
Parsley sprigs (garnish)

Directions

Place the bulgur, water, lemon juice, lemon rind, and oil in a large bowl.
Set aside to soak for about 30 minutes or until the liquid is absorbed.
Toss the soaked bulgur with the parsley, scallions, and cherry tomatoes until well mixed.
