Ingredients
Boiling water
3/4 cup bulgur
1 medium-size red onion, chopped
1 medium-size tomato, coarsely chopped, with its juice
1/2 cucumber, seeded and coarsely chopped
4 large radishes, slivered (optional)
1 cup flat-leaf parsley, coarsely chopped
2 tablespoons minced fresh mint or 2 teaspoons mint flakes, crumbled
1 tablespoon olive or canolaoil
1 teaspoon grated lemon rind
3 tablespoons lemon juice
3/4 teaspoon salt
8 to 10 drops hot red pepper sauce
Directions
1 In a large heatproof serving bowl, pour 1 cup of boiling water over the bulgur and let stand for 20 minutes or until the water is absorbed.
Meanwhile, inasmall bowl, pourjust enough boiling water overthe onion to coverand let stand for 10 minutes.
Drain.
2 Add the onion, tomato, cucumber, radishes if desired, parsley, mint, oil, lemon rind, lemon juice, salt, and red pepper sauce to the bulgur.
Toss until combined thoroughly.
Refrigerate, covered, for 6 hours or until chilled.
