Szechwan Shrimp Recipe
Ingredients
| Medium shrimp | 1 pound | |
| Soy sauce | 6 Tablespoon | |
| Dry sherry | 1/4 Cup (16 tbs) | |
| Sesame oil | 1/2 Teaspoon | |
| Scallions | 2 , chopped | |
| 2 chunks gingerroot, crushed | ||
| Salt | 1/2 Teaspoon | |
| Sugar | 1 Teaspoon | |
| 1 dried hot red pepper, seeded and crushed | ||
| Peanut oil | 1 Tablespoon | |
Directions
Clean the shrimp without removing the shells: Pull off the legs and slit the shell down the back; carefully lift out the black vein without loosening the shell.
Rinse the shrimp quickly.
Combine the remaining ingredients except peanut oil.
Add the shrimp and stir.
Refrigerate for 2 to 3 hours, stirring occasionally.
Remove shrimp from marinade and dry thoroughly.
Reserve marinade.
Serve immediately.
