Szechuan Pork Rib Roast Recipe

Ingredients
1 2-pound center cut pork rib roast
3 cups water
2 tablespoons oil
1/2 clove garlic, crushed
1 stalk'scallion, cut into 1 inch sections
2 tablespoons soy jam
4 slices ginger
1 teaspoon sugar
1/2 teaspoon tabasco sauce
Directions
Put the pork in a saucepan and cover with water.
Bring to a boil and simmer for an hour.
Remove and allow it to cool.
Remove the bones and slice the meat against the grain 1/2 inch thick.
Cut this into sections 2 inches long and 1 inch wide.
Heat a pan with the oil and when it is very hot add the garlic and stir once or twice.
Add the meat and saute for about 2 minutes.
Add the scallion, soy jam, ginger, sugar and tabasco sauce.
Saute for 2 minutes, stirring constantly, and serve very hot on a shallow dish.
