Ingredients
| 1 pound pork boneless loin or leg | ||
| Soy sauce | 1 Tablespoon | |
| Cornstarch | 1 Tablespoon | |
| Red cayenne pepper | 1/2 Teaspoon | |
| Garlic | 1 Clove (5gm), finely chopped | |
| Broccoli flowerets | 3 Cup (16 tbs), drained | |
| 2 small onions, cut into eighths | ||
| Water chestnuts | 1 Can (10oz), drained | |
| Chicken broth | 1/4 Cup (16 tbs) | |
| Peanuts | 1/2 Cup (16 tbs) | |
| Hot cooked rice | 2 Cup (16 tbs) | |
Directions
1. Trim fat from pork loin. Cut pork across grain into 2 x 1 x 1/8-inch slices. Toss pork, soy sauce, cornstarch, red pepper and garlic in 3-quart casserole. Cover tightly and refrigerate 20 minutes.
2. Microwave tightly covered on high 9 to 10 minutes, stirring after 4 minutes, until pork is no longer pink.
3. Stir in broccoli, onions, water chestnuts and broth. Cover tightly and microwave 6 to 8 minutes, stirring after 3 minutes, until broccoli is crisp-tender. Stir in peanuts. Serve with rice.
