Grilled Swordfish over Fattoush Recipe Video

This is another one of those meals that is so tasty and so impressive, yet so easy to pull together. It works really well in the warmer months, so don't think twice about making this dish for your next Summer meal!

Ingredients

 
1/2-3/4 lbs. swordfish
 
1 whole wheat pita
 
2 scallions, halved lengthwised and sliced
 
1 big fat garlic clove (or 2 small ones), minced
 
1/2 english cucmber, quartered and sliced
 
1/2 pint cherry tomatoes, quartered
 
1 green pepper, chopped
 
1/3 cup chopped mint
 
1/3 cup chopped parsley
 
juice of 1/2 a lemon
 
1/2 tsp. sumac
 
3-4 tbsp. extra virgin olive oil
 
salt and pepper to taste

Directions

Fattoush:
1. Split pita in half. Toast for 5-7 minutes in a 425' oven or in the toaster. Remove and set aside to cool.
2. Combine scallions and parsley in a large bowl.
3. Using your hands, break pita into bite size pita in a bowl along with the veggies. Add lemon, extra virgin olive oil, sumac salt, and pepper.
4. Toss well and set aside to mingle, while we prepare the swordfish!

Swordfish:
1. Season swordfish with olive oil, salt and pepper.
2. Heat grill pan over medium high heat. Cook swordfish about 4 minutes per side....done!
Plate swordfish and fattoush..drizzle with a little extra virgin olive oil and a sprinkle of parsley and mint....enjoy!!
