Swordfish Steaks With Grapefruit And Tequila Recipe
Ingredients

| Grapefruit | 1 | |
| Tequila | 1/4 Cup (16 tbs) | |
| Parsley-2 tablespoons-chopped | ||
| Vegetable oil | 2 Tablespoon | |
| Green onion-1 -chopped | ||
| Dried marjoram | 1 Teaspoon | |
| Paprika | 1 1/2 Teaspoon | |
Directions
GETTING READY
1. Season the plank
2. Preheat the plank to 350 degrees
MAKING
3. Use a zester, to shave off one teaspoon of rind from the grapefruit.
4. Set aside till required
5. Juice the grapefruit
6. In a large dish, tip in the grapefruit juice and add the zest
7. Add the swordfish steaks to the juice and zest mixture
8. Cover and mix the fish around till it is evenly coated
9. Let the fish marinate in the mix for one hour
10. Remove the fish from the marinade and place in the preheated oval of the wooden plank
11. Bake for 30-35 minutes or till done
12. Baste occasionally with the left over marinade during the cooking process

13. Serve hot with parsley butter
