Ingredients
Round steak 2 pounds, cut in serving size pieces
Flour 1/2 cup
Vegetable oil 2 tablespoons
Salt and pepper to taste
Zucchini 3 cups peeled and diced
Onion 1, sliced
Celery 4 stalks, sliced
Green pepper 1, cut in chunks
Tomatoes 2 cups cooked or canned
Directions
Place round steak on floured cutting board, cover with flour and pound it into meat; turn and do the same.
Brown pieces in hot oil; season to taste; pour off any excess oil.
Turn down heat; put diced zucchini around steak pieces; cover with sliced vegetables.
Cook slowly for 3 hours or until steak is fork tender.
Zucchini will provide needed moisture for slow cooking.
2 cups cooked (or canned) tom a toes may be added; any extra juice can be evaporated at end of cooking lime by simmering uncovered.
