Swiss Potato Cake Recipe

Ingredients

 
2 lb potatoes
 
1 onion
 
6 tablespoons butter
 
3 X 1-inch cubes unprocessed Gruyere cheese
 
salt and pepper

Directions

Parboil the potatoes in their skins for 10 minutes.
Cool, then peel.
Cut into large pieces and grate .
Chop the onion finely .
Melt half the butter in a pan and cook the onion for 5 minutes until soft.
Add the remaining butter and then the potatoes.
Grate the cheese and add to the mixture.
Season and stir well.
Press the mixture down firmly with a spatula and cook for about 10 minutes until golden-brown underneath.
Turn the potato cake over carefully with a spatula and continue cooking for 10 minutes.
Serve cut into wedges
