Swiss Christmas Cookies Recipe

Over the years I have mastered the art of making Swiss Christmas Cookies which I was taught by my family elders. This Swiss Christmas Cookies, when served as a Snack will always bring cheer to your table. In my estimation, if one is a chef, one needs to have a personal recipe of Swiss Christmas Cookies, just like I do.

Ingredients

 
1 1/4 cups strained honey
 
3/4 cup shortening
 
2 cups sugar
 
1/4 cup fruit juice
 
Grated rind of 1 orange
 
Grated rind of 1 lemon
 
2 cups unblanched almonds, chopped
 
10 cups cake flour
 
1 teaspoon salt
 
1 teaspoon cinnamon
 
2 teaspoons nutmeg
 
1 teaspoon cloves
 
4 teaspoons baking powder

Directions

Melt honey and shortening together over hot water.
Add sugar and fruit juice and stir until dissolved.
Add grated rinds of orange and lemon, chopped almonds, and the dry ingredients which have been sifted together.
Chill in refrigerator.
The dough may be kept several days to ripen or used at once.
Roll about 1/8 of an inch thick and cut in strips about 2 by 2 1/2 inches in size.
Bake in a slow oven (300°F.) 20 minutes.
While still warm, frost with Confectioners' Icing.
