Swiss Chicken Recipe
Ingredients
1 large whole chicken breast split, skinned, and boned
1/4 teaspoon each salt and paprika
1 teaspoon cornstarch
2 tablespoons cream sherry
1/3 cup whipping cream
1/2 cup shredded Swiss cheese
Chopped parsley
Directions
Place chicken, skinned side up, in a 1 quart baking dish.
In a small bowl, combine salt, paprika, and cornstarch; stir in sherry and cream; blend well.
Pour sauce over chicken.
Cover dish with a lid or plastic wrap.
Microwave on MEDIUM HIGH (70%) for 4 minutes, stirring sauce after 2 minutes and spooning it over chicken.
Rotate each chicken breast 1/2 turn; spoon sauce over chicken.
Microwave, covered, on MEDIUM HIGH (70%) for 1 minute or until juices run clear when meat is slashed.
Sprinkle chicken with cheese and parsley.
Microwave, uncovered, on HIGH (100%) for 30 seconds or until cheese melts.
Let stand for 5 minutes before serving.
