1 pound Swiss cheese, shredded with the shredding disk
1 1/2 cups dry white table wine
1 clove garlic
2 tablespoons cornstarch
Dash of freshly ground black pepper
Dash of nutmeg
2 tablespoons kirsch
1 inch cubes of stale French or Italian bread
Directions
Combine cheese, wine, garlic, cornstarch, pepper, and nutmeg in a fondue or chafing dish.
Heat gently, stirring occasionally, just until mixture, thickens and begins to bubble.
Remove garlic clove and discard.
Stir in kirsch.
Spear bread cubes on fondue forks and dunk bread into fondue.
Keep heat under fondue low to prevent coagulation of the cheese.
