Swiss Steak Recipe
This swiss steak recipe is made with a roudn steak along with vegetables. Pounded and floured, the steak is roasted in gravy for a rich and filling meal. Sided with mashed potatoes, this swiss steak makes a complete dinner.
Ingredients
1 lb. round steak
1 clove garlic
1 cup whole wheat flour
1/2 cup onion, chopped
1/3 cup carrot, finely chopped
1/3 cup green pepper, finely chopped
1/3 cup celery, finely chopped
1/2 cup stewed tomatoes drained
1 cup beef stock
1 recipe Basic Bouillon Gravy
4 cup mashed potatoes
Directions
1. Trim fat from meat and rub with garlic.
2. Sprinkle meat with some of the flour and pound. Turn meat and repeat. Continue until you have used as much flour as the meat will hold.
3. Cut meat into 6 pieces. Place in a nonstick casserole.
4. Cover with vegetables, tomatoes, and beef stock.
5. Cover casserole and cook at 300° until meat is tender, about 2 hours.
6. Strain drippings and discard. Add Basic Bouillon Gravy to meat.
