Swiss Mountain Soup Recipe

Ingredients
2 tbsp (30 mL) butter
4 green onions, minced
2 tbsp (30 mL) flour
1/2 tsp (2 mL) curry powder
1 cup (250 mL) chicken broth
2 cups (500 mL) milk
Salt and pepper to taste
1/2 lb (250 g) mushrooms, minced
1 egg yolk
1/4 cup (60 mL) cream
Chives and parsley to taste
Directions
€¢ Place the butter in a 6-cup (1.5 L) microwave-safe bowl, melt for 1 minute at HIGH.
€¢ Add the green onions, flour and the curry powder, blend together.
€¢ Add the chicken broth, milk, salt and pepper to taste.
€¢ Add the mushrooms.
€¢ Microwave 8 minutes at HIGH, stirring once at mid-cooking.
€¢ Beat together the egg yolk, cream and 2 tablespoons (30 mL) of the hot soup. Pour into the soup, stirring constantly.
€¢ Microwave at MEDIUM 4 minutes.
€¢ Garnish with chives and parsley
