Swiss Meringue Recipe

Ingredients
8 egg whites, at room temperature
1/4 teaspoon salt
1/4 teaspoon cream of tartar
2 cups granulated sugar
1 1/2 teaspoons vanilla extract
Directions
1. Beat the egg whites until frothy. Add the salt and cream of tartar and beat well.
2. Add the sugar gradually, while continuing to beat. Add the vanilla and continue beating until the mixture is glossy and stiff, but not dry.
3. Cover baking sheets with waxed paper and, using a spoon or pastry bag, shape the meringue into any desired form.
4. Bake in a very slow oven (225° F.) until firm and dry but still white, forty-five to sixty minutes. If necessary, turn off the oven heat. Remove the meringues from the paper while warm.
