Ingredients

 
2 egg yolks, slightly beaten
 
1 egg white, stiffly beaten
 
2 tablespoons sugar
 
2 tablespoons cream
 
2 tablespoons melted butter or margarine
 
2 teaspoons fruit juice
 
1 2/3 cups sifted enriched flour
 
Confectioners' sugar

Directions

GETTING READY
1) In a bowl, fold in egg yolks into egg white.
2) Place sugar in the bowl and thoroughly blend.
3) Pour in cream, butter and fruit juice to combine properly.
4) Place inside refrigerator to chill for overnight.
5) On a lightly floured board roll out to 1/4 inch thick.
6) Cut the dough into diamond shapes.
7) With a sharp knife make a slit on each diamond and draw till the end.

MAKING
8) In a skillet, place deep fat and heat up to 375°F.
9) Fry the diamonds into hot fat, until it becomes golden brown on both sides.
10) Place the diamonds on paper towels.

SERVING
11) Dust with confectioners' sugar, before serving.
