Ingredients
3 cups fresh corn, cut from cob
2/3 cup evaporated milk
1 egg, beaten
2 tablespoons finely chopped onion
1/2 teaspoon salt
Dash pepper
4 ounces (1 cup) shredded Swiss cheese
1/2 cup soft bread crumbs
1 tablespoon butter or margarine, melted
Green pepper rings
Directions
Cook fresh corn in 1 cup boiling salted water for 2 to 3 minutes or until just tender; drain well.
Combine corn, evaporated milk, egg, onion, salt, pepper, and 3/4 cup of the cheese.
Turn into a 10 x 6 x 1 1/2 inch baking dish.
Toss bread crumbs with butter or margarine and the remaining 1/4 cup cheese.
Sprinkle over corn mixture.
Bake at 350° for 25 to 30 minutes.
Garnish with green pepper rings
