 12 ounces Swiss cheese, cut in matchstick-size pieces
 2 large green peppers, cut into thin, 2-inch-long strips
 Green onions2 Small, thinly sliced
 Celery stalks3 , thinly sliced
 3 or 4 carrots, shredded
 1 jar (4 oz.) sliced pimentos, drained
 Almonds3/4 Cup (16 tbs), coarsely chopped
 1 cup sour cream or unflavored yogurt
 Dijon Mustard2 Tablespoon
 4 drops liquid hot pepper seasoning
 Salt To Taste
 Pepper To Taste

Directions

In a salad bowl, mix together cheese, peppers, onion, celery, carrots, pimentos, and almonds.
Combine sour cream, mustard, hot pepper seasoning, and salt and pepper to taste; blend well.
Pour over vegetables and toss to blend.
