Swiss Cheese Tart Recipe
Ingredients
| Plain flour | 7 Ounce | |
| Salt | 1 Pinch | |
| Pinch paprika | ||
| Butter | 5 Ounce | |
| Cheese | 4 Ounce, grated | |
| Egg | 1 | |
| Egg-white for glazing | ||
| Cornflour | 1 Teaspoon | |
| Flour | 1 Teaspoon | |
| 1 1/2 gills milk | ||
| 4 oz. grated cheese parmesan and gruyere mixed | ||
| Egg yolks | 2 | |
| Sour cream | 4 Tablespoon | |
| Salt | To Taste | |
| Paprika | ||
Directions
Pastry:
Sift dry ingredients, rub in the butter.
Add grated cheese, mix to a dry dough with beaten egg; chill for 30 minutes.
Roll out, line 8 in. pie plate.
Brush surface of pastry with a little beaten egg-white.
Filling:
Blend flours with cold milk.
Add cheese, egg-yolks, cream, salt and paprika.
Eat together spoon into pie case.
Bake in moderate oven, Mark 4, 350°F., 40 minutes to 1 hour.
