Swiss Braised Chicken Recipe

1/2 8-ounce package sliced bacon, diced
 
3 medium-sized onions, sliced
 
1/3 cup all-purpose flour
 
3/4 teaspoon salt
 
1 2 1/2-pound broiler-fryer, cut up
 
1 tablespoon salad oil
 
1 14 1/2- to 16-ounce can tomatoes
 
1/2 cup water

Directions

1. In 12-inch skillet over medium-low heat, cook diced bacon until browned. With slotted spoon, remove bacon to paper towels to drain.
2. In drippings remaining in skillet, over medium heat, cook onions, stirring occasionally, until tender and golden. With slotted spoon remove onions to small bowl.
3. On waxed paper, combine flour and salt; coat chicken pieces with flour mixture. To drippings in skillet, add salad oil. Add chicken, a few pieces at a time, and cook over medium-high heat until browned on all sides, removing pieces to plate as they brown.
4. Return onions and chicken to skillet; stir in tomatoes with their liquid and water; over high heat, heat to boiling. Reduce heat to low; cover and simmer 30 to 35 minutes, until chicken is fork-tender. Skim fat from liquid in skillet. Sprinkle with bacon.
