Swirly Fish Pies Recipe

Ingredients
2 tablespoons butter
1 small onion, chopped
1/4 cup all purpose flour
1 1/4 cups milk
1/2 cup grated Cheddar cheese
1/4 teaspoon dry mustard
Salt and pepper
10 oz cod, cooked
1 lb potatoes, cooked and mashed
Directions
Melt the butter in a pan and saute the onion until soft.
Add the flour and continue to cook for 1 minute.
Remove from the heat and gradually add the milk.
Cook, stirring, until the sauce thickens.
Stir in the cheese, mustard and salt and pepper to taste.
Flake the fish and add to the sauce.
Spoon into two individual ovenproof dishes.
Place the mashed potato in a piping (pastry) bag fitted with a large fluted nozzle.
Starting from the centre, pipe the potato round in circles to cover the pies.
Place under a preheated moderate grill (broiler) until golden brown.
Serve with a salad.
