Sweet And Sour Chicken Recipe

Ingredients
1 cooked breast of chicken
1/4 pint (U.S. 5/8 cup) chicken stock
4 tablespoons water
1/2 small clove garlic, crushed
1 teaspoon peanut oil
3/4 teaspoon sugar
1/4 tablespoon tomato puree
4 tablespoons vinegar
Pinch salt
1/2 teaspoon cornflour
1 teaspoon water
Chinese pickles for garnish
Directions
Take the breast from the cooked white cut chicken.
Add it to the heated stock and leave it for 2-3 minutes at just under boiling point.
In a small pan, mix together the water, garlic, oil, sugar, tomato puree, vinegar and salt.
Whisk while you bring them to the boil.
Blend the cornflour with the water and stir it in.
Simmer for 1 1/2-2 minutes to complete the sweet-sour sauce.
Drop in Chinese pickles to heat.
Lift out the chicken, cut it into mouth-sized pieces and place them in a heated serving dish.
Strain the hot sauce over them, garnish with the pickles.
