Directions
1. Finely dice the red and green pepper.
2. Finely shred the spring onion.
3. Cook and refresh the sweetcorn and dry thoroughly.
4. Place in a clean bowl, add the peppers and onion and mix well.
5. Season to taste.
6. Bind the sweetcorn salad together with a little mayonnaise.
SERVING
7. Serve without or with garnish as desired.
