Ingredients
1 cup cottage cheese
1/2 cup grated Parmesan cheese
1 can (12 oz) corn
1/4 teaspoon paprika
1 canned pimento, chopped
1 cup cooked peas
1 eight-inch baked pie shell
2 tomatoes, peeled and sliced
Directions
GETTING READY
1. Preheat the oven by setting it to 375°F.
MAKING
2. Take a bowl and mix in the Parmesan cheese, cottage cheese and drained corn.
3. Season with paprika, salt and pepper before adding the peas and pimento.
4. Add some of the corn drained liquor to liquefy the mixture if it is too stiff.
5. Take a pie shell and pour in the mixture.
6. Arrange the tomato slices along the edge.
7. Place in a pre-heated oven and bake for 15 minutes.
