The sweet soy sauce recipe is a homemade soy sauce recipe made with sugar and anise. Flavored and cooked, the sweet soy sauce can be used in cooking or served as a dip for fried items or fritters.
Ingredients
1 1/2 cups sugar
3/4 cup water
3/4 cup soy sauce
1 star anise, finely crushed
Directions
In a heavy 10 inch skillet heat the sugar over medium heat till it begins to melt, without stirring.
Once the sugar begins to melt, cook and stir for 2 to 3 minutes or till golden.
Remove skillet from heat; slowly and carefully stir in the water, soy sauce, and anise.
(Adding liquid to hot sugar may cause spattering.) Return the skillet to heat.
Bring to boiling; reduce heat.
Simmer about 15 minutes or till the mixture is slightly thickened and the caramelized sugar is dissolved, stirring constantly.
Cool.
Skim off foam and any anise pieces that float to the top.
Using a small sieve, strain to remove any additional crushed anise.
To store, place in a tightly covered container and chill.
