Sweet-Sour Sea Bass Recipe

Ingredients
1 2-pound bass
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon soy sauce
Enough oil for deep frying
1 green pepper, diced
Sauce:
3/4 cup vinegar
1/4 cup sherry
2 teaspoons sugar
3 tablespoons soy sauce
1 teaspoon cornstarch
1 cup water
Directions
Clean fish and do not remove the head.and tail.
Score the sides about 1 1/2 inches apart and 1 inch deep.
Season with pepper, salt, and soy sauce.
Allow it to stand for 10 minutes to absorb the flavor.
Mix the ingredients for the sauce, making sure to blend the cornstarch well.
Place in a pan, bring to a boil.
Add the green pepper and simmer for 10 minutes.
Set it aside and keep it very hot.
Heat another pan filled up to 2 inches of oil and when it is very hot lower the fish in slowly and fry one side for 5 minutes and 2 minutes on the other.
Arrange on a hot platter and pour the hot sauce over it and serve immediately.
