Ingredients
1 small head of red cabbage (about 1 pound)
1 large tart apple (not pared)
2 tablespoons butter or margarine
1 medium size onion, chopped (1/2 cup)
1/4 cup red currant jeliy
1/4 cup water
2 tablespoons lemon juice
1 teaspoon salt
Directions
Shred cabbage.
Halve, core, and dice apple.
Melt butter or margarine in large skillet; stir in cabbage, apple onion, jelly, water, lemon juice, and salt until well blended; cover.
Heat to boiling.
Simmer, stirring occasionally, about 25 minutes, or until liquid has almost evaporated and cabbage is tender.
