Sweet Relish Recipe
This sweet relish is a vegetable relish prepared with tomatoes, peppers and onions along with vinegar and sugar to taste. cooked and simmered together with turmeric, allspice and cinnamon, the sweet relish can be sealed and stored in jars with vinegar for preserving it.
Ingredients
| Green tomatoes | 6 Pound | |
| Onions | 1/2 Pound | |
| Green peppers | 1/2 Pound | |
| Granulated Sugar | 12/3 Cup (16 tbs) | |
| White vinegar | 13/4 Cup (16 tbs) | |
| Ground cinnamon | 1/2 Tablespoon | |
| Ground allspice | 1/2 Tablespoon | |
| Turmeric | 1/2 Tablespoon | |
| Cayenne pepper | 1/4 Tablespoon | |
| Celery seed | 1 1/2 Tablespoon | |
| Salt | 3 Tablespoon |
Directions
Wash and trim vegetables.
Quarter, remove stem ends from tomatoes.
Peel onions, quarter peppers and put all vegetables through medium blade of food grinder.
Drain excess liquid.
Bring sugar, vinegar and spices to a boil.
Add vegetables.
Simmer 10 minutes, stirring occasionally.
Continue simmering while quickly packing one hot sterilized jar at a time.
Fill to within 1/8 inch from top.
Vinegar solution should cover vegetables.
Seal each jar immediately.
