Sweet Red Cherry Pie Recipe

1 recipe pastry
1 1/2 pounds large sweet cherries
2/3 cup sugar
1 tablespoon lemon juice
1 teaspoon grated lemon rind
1/8 teaspoon allspice
1/4 teaspoon salt
3 tablespoons flour or 21/2 tablespoons quick-cooking tapioca
Directions
Line a 9-inch pie plate with half the pastry.
Remove stones from cherries with a sharp knife.
Toss cherries with remaining ingredients.
Pour into pie plate.
Cover with lattice top.
Bake in a hot oven (425° F) 30 minutes; reduce temperature to moderate 350° F and continue baking until fruit is tender, about 15 min- utes.
Makes one 9-inch pie.
