Sweet Potatoes In Orange Shells Recipe
Sweet potatoes in orange shells is a lovely recipe made with flaked coconut and marshmallows for flavor. Mashed and filled in orange shells, the sweet potatoes are baked and topped with marshmallows before finishing.
Ingredients
3 oranges
1 (16 ounce) can sweet potatoes, undrained
2 tablespoons butter or margarine, melted
3 tablespoons packed brown sugar
1/2 teaspoon salt
1/4 cup flaked coconut
6 miniature marshmallows
Directions
Squeeze oranges; save juice.
Remove membranes from orange shells.
Mash sweet potatoes.
Blend in 3 tablespoons orange juice, butter, brown sugar, and salt.
Stir in coconut.
Spoon into orange shells; place in shallow baking pan.
Bake at 350°F 20 to 30 minutes, until lightly browned on top.
Top with marshmallows; bake about 5 minutes to melt and brown marshmallows.
