6 cups grated peeled sweet potatoes
 
3 cups sugar
 
5 eggs
 
1 teaspoon vanilla extract
 
3/4 cup milk
 
1/4 cup (1/2 stick) butter or margarine, softened

Directions

Combine the sweet potatoes, sugar, eggs, vanilla, milk and butter in a bowl and beat until smooth.
Spoon into a 2 quart baking dish.
Bake, covered, at 350 degrees for 1 1/2 to 2 hours, stirring 3 times.
