Sweet Potato Pudding Recipe

Ingredients
2 eggs, beaten
1 cup mashed cooked sweet potatoes
1/4 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon grated orange rind
1 (12-ounce) can evaporated skim milk
Vegetable cooking spray
Directions
Combine first 5 ingredients, beat well.
Stir in milk.
Pour into a 1-quart casserole coated with cooking spray.
Place in a 10- x 9- x 2-inch bak- ing dish; pour boiling water into dish to a depth of 1 inch.
Bake for 1 hour or until a knife inserted comes our clean.
Serve warm.
