Sweet Potato Pudding Recipe

I have in the food business for a little while now and I gain a large amount of knowledge. But something’s can’t be duplicated. My grandmother Corona Frederick had a way of making blueberry muffins that I still can’t reproduce. I really miss those days waking up to that smell of blueberry muffins. I never got my grandmother to reveal how she made them but I can share her recipe for sweet potato pudding with you.

• 1 Cup sugar
 
• 2/3 Cup of Butter
 
• 2 Eggs beaten
 
• 2 Cups of raw sweet potatoes
 
• 1 Orange peel grated
 
• ½ Teaspoon of powdered ginger
 
• ½ Teaspoon of mace
 
• ½ Cup of milk
 
• Dash of Cinnamon

Directions

Pre-Heat oven to 350
• Mix butter and sugar until creamy
• Add beaten eggs to the butter and sugar
• Add grated sweet potatoes and orange peel
• Add milk and spices
• Bake for one hour.
