Sweet Potato Pie Recipe

Ingredients
1 1/2 cups sieved cooked sweet potatoes or yams
2 tablespoons butter or margarine, melted
1 teaspoon grated orange peel
1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
2 eggs, beaten
1 1/2 cups milk, scalded
1 unbaked 9 in. pie shell
Directions
Combine sweet potatoes with melted butter, orange peel, and a mixture of the brown sugar, spices, and salt; mix until thoroughly blended.
Add eggs and beat well.
Blend in scalded milk.
Turn filling into unbaked pie shell.
Bake at 450°F 10 minutes; reduce oven temperature to 350°F and bake 30 to 35 minutes, or until a knife inserted near center comes out clean.Set on wire rack to cool.
