Sweet Potato Pie Recipe
Sweet Potato Pie is a well loved dish that is often made again and again at my home. Try this Sweet Potato Pie recipe for yourself and you will understand why it is so addictive!
Ingredients
1 1/2 c. mashed cooked sweet potato 375 mL
1/2 c. brown sugar 125 mL
1 tsp. cinnamon 5 mL
1 tsp. ginger 5 mL
1 tsp. nutmeg 5 mL
2 well beaten eggs
1/2 c. milk 125 mL
1/2 c. water 125 mL
23 cm pastry shell 23 cm
Directions
Preheat the oven to 450°F (230°C).
Combine the first 5 ingredients and beat well.
Beat in the eggs.
Combine the milk and water and scald either in the microwave or on the stove.
Add the hot milk mixture to the potato mixture and beat well.
Pour into the pastry shell.
Bake for 10 minutes.
Reduce the heat to 350°F (180° C) for a further 20-30 minutes or until a knife inserted in the centre comes out clean.
Cool completely.
Serve decorated with whipped cream.
