Sweet Potato Paratha Recipe

Paratha is a recipe with a combination of wheat flour along with the choice of vegetables made into flat circular breads. Of all the common varieties, the paratha made from sweet potato is also one. Considering fiber content, complex carbohydrates, protein, vitamins A and C, B6, iron, and calcium, the sweet potato ranked highest in nutritional value. Sweet potato varieties with dark orange flesh have more beta carotene than those with light colored flesh and their increased cultivation is being encouraged in Africa where Vitamin A deficiency is a serious health problem. Despite the name "sweet", it may be a beneficial food for diabetics., as preliminary studies on animals have revealed that it helps to stabilize blood sugar levels and to lower insulin resistance.

Recipe Story

Paratha is a Indian flat bread,which is usually made with whole-wheat flour,fried in ghee. Parathas originated in Peshawar and then spread all over the former northern parts of India. It began as a wholesome meal often eaten at breakfast. The paratha is stuffed unleavened bread with various fillings that could be added according to your choice.

Ingredients

 Sweet potatoes2 (boiled)
 Wheat flour1 1⁄2 Cup (24 tbs)
 Turmeric powder1⁄2 Teaspoon
 Chili powder1⁄2 Teaspoon
 Asafoetida1 Pinch (generous pinch)
 Salt To Taste
 Coriander leaves6 , finely chopped
 Yogurt2 Tablespoon
 Oil1 Tablespoon

Directions

Peel the boiled sweet potatoes.
Mix wheat flour, spices, yogurt, oil and mashed sweet potatoes. Mix well to incorporate the spices in to the flour.
Add water as required to knead a soft and smooth dough. Keep aside for an hour for the flavors to develop.

Heat a griddle. Roll into medium sized parathas and cook like a regular paratha, spreading a few drops of oil on both the sides while cooking them.

They are very easy to roll and stay very soft for a long time. Can be served with chutney & pickle of your choice
