Sweet Potato Mince Pie Recipe

Ingredients
1 cup cooked, mashed sweet potatoes
1 cup evaporated milk
1/2 cup brown sugar, packed
1 egg, slightly beaten
1/2 teaspoon salt
1/4 teaspoon cinnamon

1 1/4 teaspoon cinnamon
1/4 teaspoon ginger
1 teaspoon grated lemon rind
1/2 tablespoons margarine, melted
1 package mincemeat
1 9-inch unbaked pie shell
Directions
Combine sweet potatoes, milk, sugar, egg, seasonings, rind and margarine; cook over low heat 3 minutes, stirring con- stantly.
Prepare mincemeat according to directions on package; spread on bottom of pastry in pie dish; pour potato mixture over mincemeat.
Bake in hot oven (450° F) 15 minutes; reduce temperature to 350° F and continue baking 25 to 30 minutes or until a silver knife comes out clean when inserted in the center.
Makes one 9-inch pie.
