Sweet Potato Crunch Recipe
The sweet potato crunch is a cooked baked potato preparation made with sweet potatoes. One of my favorite sweet potatoes bake, this recipe is made bu whipping the cooked potatoes along with vanilla and cinnamon for flavor. Topped with four and nut mix, the sweet potato crunch is delicious and a perfect meal accompaniment.
Ingredients
6 medium to large sweet potatoes
3 eggs
1/4 cup butter
1/2 cup sugar
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla
Topping:
1/4 cup butter
1/2 cup brown sugar
3 tsp flour
1/2 cup pecans, chopped
Directions
Peel and cook potatoes.
Whip potatoes.
Add remaining ingredients, mix well and put in an ovenproof casserole.
Topping: Put ingredients in a skillet and stir until well mixed.
Spread over potatoes and bake at 350°F for 30 to 45 minutes.
